Preheat a slow cooker on the low setting for 20 minutes.

Pat the chicken legs dry and season them well with salt and pepper.

Heat 2 tablespoons of the olive oil in a large skillet over medium heat. When the oil is shimmering, add the chicken legs and sear them on one side for 5 minutes. Then flip them over and sear for another 5 minutes, until nicely browned on both sides.

Pour the broth into the slow cooker and add the onion, half of the celery, the mushrooms, and the bay leaves. Add the chicken, cover, and cook for 4 hours.
